There is no kind of comfort food to me quite like pasta. You could easily find me eating pasta seven days a week if I weren’t so concerned about what it was doing to my vitals internally. 😉

While I enjoy a good pasta full of creamy goodness, I love it even more when my pasta is paired with yummy veggies – giving me just enough incentive to not feel so bad about indulging.

That’s why I’m OBSESSED with this pasta recipe! I used to make it sans the bacon, and one night the hubs suggested we try adding it in. We did, and the rest was history! I never make it without the bacon anymore!

To make your cooking night go even faster, I like to prep my veggies ahead of time. That way, the night I make this, it’s suuuper quick and easy!

Ingredients:

  • 2 tsp minced garlic (or, if you prefer fresh garlic, 4 large cloves peeled and thinly sliced)
  • 1 TBSP olive oil
  • 3 cans (14.5 oz) chicken broth
  • 1 lb penne pasta
  • 2 small-medium heads broccoli, cut into florets (approx 4 cups)
  • 2 medium carrots, peeled and cut into quartered slices
  • 4 oz cream cheese, cut into cubes
  • 1/4 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 lb bacon, cooked and diced

Directions:

  1. Place olive oil and garlic into large stock pot. Cook over medium heat until garlic is golden brown, stirring occasionally.
  2. Remove pot from heat. Add chicken broth and return to stove. Turn heat to HIGH, cover and bring to a boil.
  3. Stir in pasta. Cover and cook 7 minutes, stirring occasionally.
  4. Add cream cheese to pot and stir until fully incorporated. Toss in chopped broccoli carrots, and bacon. Add salt and pepper.
  5. Reduce heat to medium. Cover and cook an additional 5-7 minutes or until veggies are tender, stirring occasionally.
